A way to data log/track AFR without a tuning software

Is there a way for me to data log without having to buy a tuning software?

Sure go buy one of the many track recording devices.

A good example is the AIM Solo 2 DL unit.

Bimmerlink has realtime sensor values.

https://www.bimmerlink.app/

Not sure if it has AFR though.

IIRC torque lite is free and can do afr readings on bmws. ISTA+ can do lambda values as well.

IMO if your car is stock AFR values don't matter because regardless the car will be regulating these values to meet its target values.

I have a CSF intercooler, upgraded charge pipe, pure v2 turbo inlet pipe, and turner motorsports intake so im worried all these breathing mods will affect my AFR.

They won't, the intercooler, charge pipe, and inlet (just allows turbo to breathe easier) are all closed loop items they don't allow for additional air flow per say. The intake should allow for more air flow in conjunction with the inlet, but the good thing about bmws is that the ecu is extremely smart and can adapt easily to changes unlike japanese cars like the sti. So even if you get more air flow the car will adapt to the changes to bring the afr back to within targets. You don't have anything to worry about, even with a catless down pipe the car will be able to adapt. You just don't get any power gains.

The ecu is so intelligent it can even adapt to e85 fuels, which is the whole reason how these cars could utilize flex fuel on piggy backs.
