Do you have a picture of what you did?

All mats intentionally leave a big gap between them and the pedal for safety reasons I'm guessing, so there's no chance of the mat pressing down on the gas pedal. I'm sure they could have left a smaller gap if they wanted. Same thing happens with my BMW mat.
The gas peddle is plug and play. unscrew from the floor and slide the plastic sheet under it then screw it back down. In reality you have to remove the gas peddle to steam clean the carpet properly anyway and this prevents this completely and really takes 5 minutes....

I like those a lot I just wish they came in more of a black or dark grey.

I just use a piece of thin plastic sheet off a roll I have at home. It want to be thicker than a plastic bag - but not by much. It is just to stop the water (and salt) from hitting the area around the peddle base. Even if the salt migrates off the plastic it is way easier than cleaning it around the peddle! Hope this helps.
