Think it has to do with chains. If you keep 265 rear size or even 255 there is not enough space to fit chains, hence the 235 recommendation. Not sure though that many people will put chains on an M2... I will if possible (and needed to access ski resorts)

Because here we only can ride with the tire sizes recommended by the manufacturer, if we ride with 245/255 we are outlawed

I thought it was strange, too, but I have now seen it with my own eyes and they don't look stretched or oddly fitted in any way. The 641m wheels actually look much better than the 788m in my opinion.
