It's correct that the tire won't be as square, but you can still run an 11" rear without rubbing, you just need the perfect offset, the perfect tire, the perfect drop, and the perfect camber. But it can be done.

The 295 PS4S above would fit perfect on a 19 x 11 +45, and require little effort in the way of fitment without rubbing. It's when guys try to go to the 305 rear, getting that square fitment, that they have problems.

Also keep in mind it's ALWAYS about the specific make/model tire you choose. Some run wide, some skinny, some have a more rounded shoulder (all season), and some have a super square shoulder. Even how hard the sidewall is comes into play when you're talking about fitting an 11" wheel, but it can be done, I've seen it.
