However, it would be nice to have the option to actually pick your poison by offering different configs. Porsche does that. You can make it more track focused by selecting bucket seats, opting out of infotainment, and many other things.
Individually spec vehicles would cost more overhead, which would be passed along to consumer, whom would probably reject the idea of paying a 100k for a vehicle, even if it's exactly what they wanted.

The Volkswagen Group markets the Porsche brand to a particular type of consumer, whom has the means and don't mine paying for the privilege of getting a vehicle exactly how they want it.

BMW modulation of vehicles saves cost and in turn it is usually passed along to the consumer.

There is usually a rhyme behind every reason.
