Motorsport/performance versions of many cars are intentionally limiting torque at lower rpm especially when the steering wheel is turned… this is to reduce snap oversteer. Remember that pre 2017 M3/M4 cars would oversteer easily coming out of turns, the same S55 motor with competition tune is now limiting torque at lower rpm for better control…
My 2017 Giulia Quadrifoglio clearly limits torque coming out of corners/turns until the steering is fully straight, then I feel a surge of torque..

So this is not turbo lag/transmission software issue but actually intentional tuning as such by the manufacturers..
