You'll notice that some of them rise differently, the keys will have different spacing and the muscle memory that you have for typing will ultimately change. I've noticed it on a couple of keyboards and especially when you get past the 75wpm bump then you recognize how fast the keys are able to move as well when you're going through all your motions. I type considerably faster than 75, but I think that's when most people begin to notice that they can press more than four keys at one time or that they'll have to press the same key multiple times faster than a regular keyboard or a different keyboard is able to register it.
