Haven't had any direct experience with the Viper, but just got a ride with an instructor in a Z06. I'll tell you what the Z has over the Viper IMO: it looks great, it sounds great, you can drive it on the street because it isn't harsh at all, and it has all the comforts of the regular Vette.
I was impressed, and despite all the stories with the Z overheating at the track, Anecdotically this guy had had a total of 15 track days in 2015 with his car, without any issues. It was a manual gearbox if it makes any difference.
To me the ACR seems much more like a track only toy. I could be wrong.
