1. Did you remove the sensors entirely, i.e. unclip them? I use zip-ties to strap the sensors out of the way, usually to themselves or somewhere on the suspension where travel won't interfere, the sensor is still connected and no lights appear but the sensor wouldn't do anything.
2. I can't say but I thought the counterweights are for reducing squealing and vibration, I don't think they'd have other noticeable effects.
3. Yes, the pads don't have anti-rattle shims and are a bit looser so they will clunk the first time the brakes are applied after any change of direction. It is the pad literally sliding to the top or bottom of the caliper.
4. They wouldn't come with the sensors, sensors are usually bought separate to the pads (usually pretty inexpensive). HP Autosport or anyone that has the DS2500 would need to confirm whether the pads have the cut out for the sensor to slot into.
