This is a good point. No color is safe for track days except for black. On a different car I had Brembos painted black with some high temp decals by a reputable shop. The decals turned dark brown and the clear coat over the decals cracked half way through the second track day. If I ever paint calipers again it'll be black with decals over the top that can be easily replaced after track days.

For a street car I'd still go with a caliper color that's a darker shade so they don't show brake dust as much. I've had yellow and they were a nightmare to keep clean. Just a few miles of driving and brake dust was visible.
