Well thats a bit extreme. No oil is improving over 180, OEM's run 200+ oil temps as the oil is thinner and it makes for a marginal improvement in fuel economy and also they can boil off any condensation 100% on vehicles that don't get driven hard. But from a performance and protection point of view you've already started to head the over the top of the curve by 190F.

160F is a completely safe temp to start getting into it, but not before that I agree.

Most external oil thermostats are set to 185, that's considered the golden point.
