I've watched that video numerous times, always on a phone, and yeah he balks slotting it into gear and repressed the clutch - no double clutch
Senna's PRINCIPLES OF RACE CAR DRIVING book never mention double clutching, however, Alain Prost's driving book does mention double clutch on the downshift / lift up clutch while in neutral and sliding into lower gear then depress clutch blip the throttle and complete the change - Prost says lifting the clutch in neutral slows down the spinning plates. Prost may also be eluding to crash boxes transmissions which on the upshift you can pretty much shift floored without any clutch, though on the downshift you really need to double clutch to slow down the transmission side while blipping the engine side.
