BMW could have made the roof a factory option at a significant up-charge ($2x current price?) and still had a higher take rate then selling at MSRP and forcing dealer install. Plus, BMW could pocket the material costs for the old roof. It's almost like they're trying to discourage M2 owners from doing this.
