The pork loin was slow cooked and shredded with stewed red chile made from steamed and pureed chile pods with garlic and herbs. The pork juice was mixed with the masa to get the right consistency and the tamales are very small with minimal masa.

There will be another pot of red chile to go with pinto beans.

The posole gets pig foot for flavor and then it gets removed before eating. Whoever actually likes that can have at it. I won't touch it, but posole doesn't taste right without it.
