I'm interested as well, and trying to figure out how the math works for down-sizing from stock. Do you want to get a rolling diameter close to the rear wheel, or the front wheel? (Which one matters for keeping the speedo correct?)
I personally own a set of Nokian Hakkapellitta R2 already that I'm hoping I can make work, even though they are a bit narrower than BMW suggests.

Yeah, so your second link (http://f87.bimmerpost.com/forums/sho....php?t=1297770) discusses sizing a bit, but never really comes to a conclusion on why BMW goes with the relatively wide setup that they do for winter usage.
Narrower is better for snow and ice, assuming the tires are load-rated high enough. Nobody ever fully figured out why they don't recommend a square winter setup except for the snow chains situation and why they seem to "prefer" a staggered configuration.
