Looks like the 255/35 option is just under 5mm taller. Maybe that doesn't make much difference? I find that weird as well.
and from "everything" I've ever read, you want a narrower tire for winter (and I would expect rain too). While your grip will be better in the dry with the 255 width, that is the only place it will be better
